dOUBLE chOCOLATE cOOKIE DOUGH BROWNIES

Cake and Slice

Ingredients
For the Brownie:
150g of dark chocolate
100g of white chocolate
100g of unsalted butter
4 large eggs
1tsp of vanilla extract
60g of plain flour
60g of cocoa powder
For the Cookie Dough:
100g of unsalted butter
175g of soft brown sugar
1tsp vanilla extract
120g of plain floor
1tbsp of milk

Method
1. Grease a 20cm x 20cm square cake Tin and Pre-heat oven to 180C (160C Fan).
2. Place the dark chocolate and butter into a heat proof bowl over a saucepan of
boiling water, and slowly melt the two together, then take off the Heat and leave to cool.
3. In a separate bowl, combine the flour and cocoa powder.
4. Once the chocolatey mixture has cooled, beat in the eggs.
5. Sieve the combined powders into the wet mixture and gently fold.
6. Finely chop the white chocolate and add to the mixture.
7. Pour into the greased tin, and bake for 30 - 35 minutes. the mixture will be 'set' in the middle, but may still be gooey. Set aside to cool.
8. For the cookie dough, cream the butter and sugar together, then Add the vanilla extract and milk.
9. Beat in the flour until the mixture forms a firm ball.
10. Once the brownie has cooled, spread the cookie dough evenly on top.
11. Place in the fridge for a minimum of an hour and allow the mixture to cool and set.
12. Cut the brownie into small squares and finally....ENJOY!!!!
