Mummy's Apple and rASPBERRY cRUMBLE CAKE

Ingredients 

1 Bramley aPPLE

100G OF sOFTENED uNSALTED BUTTER

175G OF CASTER SUGAR

1 LARGE EGG

280G OF SELF-RAISING FLOUR

125ML OF COCONUT MILK

200G OF RASPBERRIES

FOR THE CRUMBLE TOPPING

50G OF uNSALTED BUTTER

85G OF SELF-RAISING FLOUR

100G OF CASTER SUGAR

ZEST OF 1 LEMON

Method
1. pREHEAT THE OVEN TO 180°C  and a line a 20x30cm cake tin with baking paper.
2. peel and core the apple, chop into small piece, place in a saucepan with 2tbs of water and gently heat on the hob till the apple starts to soften.
3. While your apples are softening make the crumble topping. Rub the butter, flour sugar and lemon zest until you have large breadcrumbs, set aside till later.  
4. Beat the sugar and butter until light and fluffy and add the egg. after the egg is fully incorporated into your beaten butter beat in the milk and flour until everything is combined. Place into the prepared cake tin, dot with raspberries. sprinkle over the crumble topping and bake in the oven for 45 minutes or until a baking skewer comes out clean. Leave to cool in the tin completely before attempting to remove and cut into pieces. 
 
Pop the kettle and enjoy!!!!
